Or not. 1 package plain microwaved popcorn, popped2 tbsp sweet cream butter like Kerrygold2 tbsp white truffle oil1 tbsp minced black truffles1/4 cup fresh grated parmesan cheese2 tbsp chopped parsley1/4 tsp sea saltIn a small sauce pan, melt butter and combine with white truffle oil and minced black truffles. Stir continuously over low heat until fragrant. Open popcorn bag and drizzle with truffle butter, shaking the bag until popcorn is evenly coated. Add salt, parmesan cheese, and chopped parley to the bag and shake again. Pour it in to a fancy bowl or eat it straight out of the bag. I won’t judge.
Sweet Potato Chips with Garlic Labneh
For the chips:1 to 2 sweet potatoes, washed and dried2 tbsp extra-virgin olive oil1 tsp paprika1/2 tsp sea salt1/2 teaspoon freshly cracked black pepperPreheat oven to 450˚F. Line a large baking sheet with parchment paper. Slice the sweet potatoes into 1/4 inch thick slices. In a large bowl, combine olive oil and remaining ingredients. Add the sliced sweet potatoes and toss to coat. Bake until lightly browned and crispy, about 10 minutes. For the Garlic Labneh:1/4 cup labneh2 tbsp feta cheese1 clove garlic, crushed1/2 tsp lemon juice1 tsp chopped parsley1 tsp chopped mint1 tsp chopped chivesSea saltBlack pepperCombine all ingredients in a small bowl and mix thoroughly. Serve immediately with sweet potato chips.
Nutella and Brie Bites
1 loaf brioche bread, sliced in half lengthwise1/2 stick butter, melted1/2 cup homemade Nutella spread1 wheel brie cheese, sliced1 tsp flaked sea saltPreheat oven to 450˚F. Place bottom of brioche loaf on a baking sheet lined with parchment. Spread Nutella on the bread and top with brie cheese slices. Cover with the top half of the bread. Brush the top of the loaf with melted butter and sprinkle with flaked sea salt. Bake until cheese is melted and the top of the bread is golden brown, about 10 minutes. Cut the loaf into 2” squares using a bread knife and serve.
Roasted Beet Slices with Herbed Goat Cheese
For the beets:4 beets, peeled, washed, and dried2 tbsp extra-virgin olive oil1 tsp paprika1/2 tsp sea salt1/2 teaspoon freshly cracked black pepperPreheat oven to 450˚F. Line a large baking sheet with parchment paper. Slice the beets into 1/4 inch thick slices. In a large bowl, combine olive oil and remaining ingredients. Add the sliced beets and toss to coat. Bake until lightly browned and crispy, about 20 minutes., flipping halfway through.For the Goat Cheese:1 small log goat cheese1 clove garlic, crushed1 tbsp chopped basil1 tbsp chopped parsley1 tbsp fresh cracked black pepper1/2 tsp sea saltCut goat cheese into 1/4 inch slices and roll into balls. Combine remaining ingredients in a bowl and roll goat cheese balls in herb mixture. Place balls on top of roasted beets and serve.
Smoked Salmon Bagel Bombs
For the dough:3 1/2 cups flour1 tablespoon sea salt1/2 packet active dry yeast1 3/4 cups watergrapeseed oilStir together all ingredients and knead for 10 minutes. Allow to rise in a covered, oiled bowl for 45 minutes. For the filling: 4 oz smoked salmon, chopped16 ounces cream cheese1 tsp chopped scallionsSea saltFresh cracked black pepperCombine all ingredients and scoop into lumps on a small parchment lined sheet pan using a tablespoon. Freeze until solid, about 1 hr. For the toppings:
1 tbsp white sesame seeds
1 tsp dried onions1 tsp poppy seeds1 tsp dried garlicTo assemble:1 egg1/2 tsp waterBagel doughFillingToppingsPreheat oven to 325˚F. In a small bowl, combine egg and water to make an egg wash. Divide dough into 16 equal pieces and flatten into little circles about the size of your palm. Put a piece of frozen filling into the center of each circle and roll into balls. Brush with egg wash and roll in toppings. Place bagel bombs on a parchment lined baking sheet and bake for 20-30 minutes until golden brown. Snacking doesn’t have to be simple.
